I went on a mid week grocery trip yesterday. I had been scouring the web and blogs for some recipe ideas, lunch ideas, etc. I was nearly out of greek yogurt so I wanted to pick up some of that. I also wanted some flax seed to add to my oatmeal in the morning & I was hoping I could find some agave nectar. Not that I really sweeten a lot of stuff with sugar, but I am hoping to convert JMac away from his 3 tablespoons of sugar in his coffee every morning.
This morning was the first morning I tried a breakfast sandwich that Susan over at All Things In Moderation She had poached an egg, toasted an English muffin & added some spinach & Laughing Cow cheese. I changed it up a bit. I used 100% whole wheat sandwich thins (Arnolds brand) and then I used only egg whites. Let me just say this was wonderful!!

6 - 9 tbs - egg whites (use a microwave safe bowl & add just a very thin layer of spray oil, add the egg whites & then microwave for 90 seconds -- they come out perfect)
1 wedge Laughing Cow cheese
small handfull of spinach
pepper to taste

hmmmm...that looks really good. i haven't heard of the sandwich thins before. i've been using the reduced calorie bread. i'll have to look for the sandwich thins and give them a try!

Yum! I've been buying those sandwich thins for a couple of months now, and I was THRILLED beyond to belief to find them at my Sam's Club this past weekend.
I've been making a less-healthy version of this sandwich for myself and my son for the past couple of weeks now. (2 scrambled eggs, with about a tsp. of shredded cheese mixed in, and a slice of canadian bacon. Yummm!) I adore Laughing Cow Cheese, and of course, I have some in the house, so I guess I'll be trying that tomorrow for breakfast!
